This is the second installment of The Apartment Gourmet… You may find an explanation and introduction here.
As I left off , breakfast is usually a typical meal of the day for me. You can’t go wrong with cereal and milk and I’m not a firm believer in shocking your digestive system from the get-go of the day.
So lunchtime is usually a good time to start spicing things up a bit. And I’m not kidding about the spice.
I’m talking flaming hot cheese puffs, with lime for an extra flavorful kick, wrapped in a warm toasty piece of wheat bread smothered in sting cheese.
Now I know there has been some debate about whether or not string cheese is any good when eaten in any other way than nature intended, but that person has probably never had the courage (or as he says, the “huevos”) to do anything more adventurous with his string cheese than peel it or eat it whole. Yuck to the latter, fo sho.
So with pleasure and a full tummy, I bring to you the first recipe from the Apartment Gourmet:
Recipe #1: Flaming Hot Grilled Cheetos Sandwich
(Now, don’t be afraid, I’ve tried it out and my tummy’s dancing with delight)
28 Flaming Hot Cheese Puffs with Lime (28 because it is the portioned serving size and not only is this convenient for calorie consumption, etc., but it is also to ensure I get at least 9 servings out of this bag [see figure 1].)
1 string cheese stick
1 piece of bread
1 cup Blue Stuff (I prefer the “Hawaiian Blue” type of Blue Stuff, but really any Blue [or any other color for that matter] Stuff works just the same.)
Directions:
For your convenience, I have provided pictures to accompany my step-by-step directions.
Step 1: Wash hands. I recommend with soap and warm water to the tune of “Happy Birthday to You” done with a hana hou.
Step 2: Open string cheese and place on top of sliced bread (See Figure 2).
Step 3: Roll bread around cheese, pinching as you go (Figures 3 – 4).
Figure 3 – 4

Step 4: Place seamed end down on paper towel and microwave on high for somewhere around 30 seconds… maybe a little less depending on your microwave (My microwave was a little stronger than I thought which produced the results in Figure 5).

Step 5: Heat a small pan on stove over Medium High heat and place string cheese wrap in pan.
Step 6: Stick one cheese puff in each end of the cheese wrap making sure to have equal cheese puff to bread and cheese ratio throughout roll (Figure 6).
Figure 6
Step 7: Flip over roll in pan when brown and toasty and remove from heat when all parts of roll are nicely toasted.
Step 8: Count out 28 cheese puffs and place on same paper towel used to microwave cheese roll (for conservation sake).
Step 9: Pour out one cup of Blue Stuff into a drinking glass.
Step 10: Enjoy! (Figure 7)
Tip: To prevent orange stains on fingers, I recommend using chopsticks when eating cheese puffs. Figures 8 – 12 are some step by step pictorial instructions on chopstick-cheese puff usage.
